Q: What is your Sponge Candy made from?

Ingredients: sugar, corn syrup, cocoa butter, milk, chocolate liquor, soy lecithin, sodium bicarbonate, gelatin & vanillin. Contains milk & soybeans. Made with equipment which is also used to make products containing milk, eggs, soy, tree nuts (almonds, brazil nuts, cashews, macadamia nuts, pecans, walnuts), peanuts & wheat.

Q: What chocolate do you use?

We use a mix of Wilbur’s Cashmere and Sable for our milk chocolate Sponge Candy. For our dark chocolate Sponge Candy we use Wilbur’s Brandywine. Want to know more?

Q: I see “sodium bicarbonate” as an ingredient. Can you tell me the sodium content per serving?

We calculate the sodium content of Sponge Candy (both chocolate and center) to be 100mg per 2 oz. serving (which is usually 4 pieces). That would be 4% of the daily 2500mg intake on a 2000 calorie diet (as is specified on nutrition labels).

Q: Is your Sponge Candy made from any animal products?

Yes. Gelatin is an animal product along with milk.

Q: Is your Sponge Candy made from any pork products?

Yes. We have checked with our supplier and the gelatin we use is a pork product. We will be changing suppliers for gelatin this season and this might change so check back here if this is a concern for you.

Q: Is your Sponge Candy made with any of the major food allergens?

Yes. Sponge Candy contains milk and soy. We also include in the declaration’s last sentence all those major food allergen ingredients that we use in other products we make which the Sponge Candy is likely exposed to such as milk, eggs, soy, tree nuts (almonds, brazil nuts, cashews, macadamia nuts, pecans, walnuts), peanuts & wheat.

Q: Can I safely eat your Sponge Candy if I have a I have an allergic reaction to [name a major food allergen]?

In a word: NO. There’s no way we can make a food allergen-free center in our small candy kitchens as long as we are processing food allergen ingredients. Not only are we unable to reliably separate center preparation into allergen and non-allergen, but also our enrober lines (machines that chocolate coat the centers) are shared and therefore contain food allergens. The only major food allergen that isn’t likely to pass through our candy kitchens is shellfish.

Q: I have a serious allergy to another food ingredient that’s not one of the major food allergens. Can you tell me if you make any products containing this specific ingredient?

Maybe, but not with a reliable certainty. While 90% of all food allergies are due to the 8 major food allergens, the other 10% of food allergies are due to more than 250 different food allergens. As the Food Allergen Labeling and Consumer Protection Act of 2004 has taken effect as of January 1, 2006, we can expect to see an improved labeling of ingredients eventually coming from our vendors. Keep in mind, this is the revised corrected labeling only on those ingredients manufactured after this date. Hopefully everyone will be reviewing their ingredients declarations and revising them in light of the new regulations.
